
For the bruschettes: preheat the oven to 180°C or heat a grill.
Meanwhile, place the fresh salmon carpaccio on a plate and season it with a few tablespoons of extra-virgin olive oil and pepper.
Toast the slices of wholemeal bread in the hot oven or on the grill until they are golden on both sides.
To serve: lightly oil the warm toasted bread slices and place the salmon slices on top, add the fresh parsley, the chopped tomatoes and the sesame seeds.
Serve the bruschettes hot or cold.
