Calabrian lamb chops are a traditional dish of Calabrian cuisine. The chops are slowly cooked with tomatoes, green olives, onion and peppers, which give the dish an intense and aromatic flavor. Fresh parsley adds a touch of freshness. This dish is perfect to enjoy during cold winter evenings.
Heat 8 tablespoons of oil in a saucepan and cook for 15 minutes the chopped onion with the parsley, the peppers (stem and seeds removed) cut into pieces, the peeled and sliced tomatoes, the olives, salt and pepper.
Brown the chops in a pan with oil and then transfer them to the saucepan with the vegetables.
Adjust seasoning with salt and pepper and let simmer for 5 minutes to develop the flavors.
