

Baccalà alla Calabrese is a typical dish from the Calabria region, made with softened salted cod and seasoned with a delicious sauce of tomatoes, onion, celery, pine nuts and sultana raisins. Pitted black olives give the dish an intense flavor. Finally, it is served with slices of crispy bread.
Sauté the coarsely chopped celery and onion; add the tomatoes and cook for 15 minutes over moderate heat.
Add the salted cod pieces and continue cooking over low heat.
After 20 minutes finish with pine nuts, raisins and olives.
Serve with slices of toasted bread.
