

Carp in Wine is a traditional Italian dish prepared with carp, red wine and vegetables. This main course is rich in flavors and aromas and will surely be appreciated by all fish lovers. The carp is cooked in red wine together with carrots, onions and celery to obtain tender and flavorful meat. The cooking sauce is then reduced and enriched with olive oil and butter to obtain a tasty sauce. Serve with a side of vegetables or roast potatoes.











Soak the carp in cold water for 2 hours.
Drain it, gut it and wash it thoroughly.
In a pan heat two tablespoons of oil with a knob of butter and gently soften the finely chopped carrots, onions and celery.
After fifteen minutes, put the carp in the pan, season with salt and pepper and moisten it with the wine diluted with a little water.
Bring to a boil in an uncovered pan, then cover and simmer gently for 45 minutes.
Remove the fish from the pan and lay it on the serving platter.
Pass the cooked vegetables through a food mill, return them to the sauce, let it thicken and finish with a knob of butter.
Serve the carp with the sauce.
