Soak the carp in cold water for 2 hours
Drain, gut, and wash it thoroughly
In a pan, heat two tablespoons of oil with a knob of butter and sauté the finely chopped carrots, onions, and celery
After a quarter of an hour, place the carp in the pan, season with salt and pepper, and pour over the wine diluted with a little water
Bring to a boil uncovered, then cover and simmer gently for 45 minutes
Remove the fish from the pan and place it on a serving dish
Pass the cooked vegetables through a food mill, return them to the sauce, thicken, and finish with a knob of butter
Serve the carp with the sauce
