
The cauliflower flan is a delicious side dish made with cauliflower, eggs, and grated Parmigiano cheese. Perfect to serve as a side with meat or fish dishes.





Boil the cauliflower in salted water, drain it and mash it with a fork
Sauté it in butter and gradually add flour and milk; cook for 15 minutes on low heat, stirring constantly
When the mixture is almost cold, add salt, nutmeg, and the eggs, whisking for 5 minutes
Pour it into a greased mold sprinkled with breadcrumbs and cook in a water bath for over 1 hour
