Peel the celery down to the heart and trim the core, discard the hard outer stalks and remove the strings
Cut the stalks into pieces about 10 cm long
Rinse the celery in cold water and wash them thoroughly
Plunge them into a pot of boiling water and let them boil for a few minutes
Drain them, rinse under water, and dry them
Put a knob of butter, the chopped onion, and the ham cut into small pieces in a pan
Sauté, then add the celery and let them absorb the flavors
Salt, pepper, and moisten with a ladle of water in which you have dissolved a pinch of meat extract
Cover, lower the heat, and let them finish cooking
