Cut the breasts in half and then divide them again in two, remove the small bone and lightly pound them
In a bowl mix the ground meat with the grated cheese, a pinch of nutmeg, salt and pepper
Spread the mixture on the chicken fillets, roll them up, tie them and coat them in flour
In a pan heat the butter and sauté the onions sliced into thin slices until soft
Then brown the rolls for a few minutes
Pour in the beer and cook for twenty minutes
If necessary towards the end increase the heat to reduce and thicken the cooking sauce
Untie the rolls, slice them into rounds, arrange them on a serving plate, coat them with their sauce and serve
