Clean and wash the champignon mushrooms, then cut them in half and sauté them in a pan for 4/5 minutes with 2 tablespoons of oil and a clove of garlic; then set them aside
Flame the chicken, wash and dry it, then cut it into pieces
Brown it in a pan where you have melted the butter
When it has browned, add salt, a teaspoon of paprika, then drizzle with half a glass of Calvados
Cover, lower the heat, and cook for about 45 minutes, adding a little hot broth if the preparation dries out excessively
Meanwhile, clean the leeks, wash them, and cut them into pieces about a couple of cm long, then add them to the chicken towards the end of cooking
After about 10 minutes, also add the mushrooms and cream, let everything flavor for 5 minutes, and serve
