Clean and wash the champignons, then cut them in half and sauté them in a pan for 4/5 minutes with 2 tablespoons of oil and a clove of garlic; then set them aside
Flame the chicken, wash and dry it, then cut it into pieces
Brown it in a pan where you have melted the butter
When it has taken on color, salt it and add a teaspoon of paprika, then drizzle with half a glass of Calvados
Cover, lower the heat, and cook for about 45 minutes, adding some hot broth if the preparation becomes too dry
Meanwhile, trim the leeks, wash them, and cut them into pieces of a couple of cm, then add them to the chicken towards the end of cooking
After about 10 minutes, also add the mushrooms and cream, let everything simmer for 5 minutes, and serve
