Chickpeas with anchovies are a delicious side dish made with chickpeas, anchovies and parsley, dressed with olive oil, salt and pepper. This recipe is typical of Italian cuisine and features a salty, aromatic flavor thanks to the addition of anchovies.
Cook the chickpeas as indicated above
Prepare the anchovy sauce by heating a generous amount of oil in a small pan and letting the desalinated, boned anchovies melt into it
After about ten minutes add a bunch of chopped parsley and a pinch of pepper
Stir
Dress the chickpeas with the hot sauce, check the salt and serve
