

Salted cod gratin is a delicious fish dish typical of the Italian tradition. The salted cod is softened in milk, then cooked with a creamy anchovy sauce and gratinated in the oven with grated cheese. The result is a dish with an intense and irresistible flavor. Perfect as a main course for a special dinner or a Sunday lunch.
Drain the salted cod and cut it into fairly large pieces
Remove the skin and bones
In a baking dish heat four tablespoons of oil and sauté the chopped onion and the whole garlic cloves
Brown the cod on both sides, pour in the milk, season with salt and flavor with a pinch of pepper
Cover the dish and transfer it to a preheated oven at 180°C for about 2 hours or until the milk has been completely absorbed
In a small saucepan melt the anchovy fillets over low heat with three tablespoons of oil, then pour the sauce over the cod
Sprinkle with chopped parsley and mix gently
Sprinkle with grated cheese, place under the grill and when a golden crust has formed remove and serve
