Cod au gratin is a delicious fish dish typical of Italian tradition. The cod is a salted fish that is softened in milk, then cooked with a creamy anchovy sauce and baked in the oven with grated cheese. The result is a dish with an intense and irresistible flavor. Drain the cod and cut it into fairly large pieces
Remove the skin and bones
In a baking dish, heat four tablespoons of oil and sauté the chopped onion and whole garlic cloves
Brown the cod on both sides, pour in the milk, season with salt and a pinch of pepper
Cover the dish and transfer it to a preheated oven at 180 degrees for about 2 hours or until the milk is completely absorbed
In a small pan, melt the anchovy fillets over low heat with three tablespoons of oil, then pour the sauce over the cod
Sprinkle with chopped parsley and mix gently
Dust with grated cheese, place under the grill, and when a golden crust forms, remove and serve
