Chop 400 g of cod soaked in water and deboned; boil it in 1/2 liter of milk and 1/2 liter of water with a pinch of salt, 2 finely sliced onions, and 2 quartered potatoes
When the cod is well cooked, pass everything through a sieve, return to the heat, and bring back to a gentle boil
Adjust the salt, add pepper, half a teaspoon of apple cider vinegar, 1/2 glass of liquid cream, and 1 teaspoon of chopped chervil
Serve with croutons
