Salted Cod Soup is a traditional dish of Italian cuisine, particularly common in coastal regions. Made with soaked salted cod, water, milk, onions, potatoes and flavored with pepper, apple cider vinegar and chopped chervil, this fish soup is full of flavor and perfect to enjoy in the colder months.
Chop 400 g of soaked, deboned salted cod; cook it in 1/2 liter of milk and 1/2 liter of water with a pinch of salt, 2 onions thinly sliced and 2 potatoes cut into wedges.
When the salted cod is well cooked, pass everything through a sieve, return to the heat and gently bring it back to a simmer.
Adjust the salt, add pepper, add half a teaspoon of apple cider vinegar, 1/2 glass of heavy cream and 1 teaspoon of chopped chervil.
Serve with croutons.
