
Bacalao Soup is a traditional dish of Italian cuisine, particularly widespread in coastal regions. Prepared with soaked salted cod, water, milk, onions, potatoes, and flavored with pepper, apple cider vinegar, and chopped chervil, this fish soup is rich in flavor and perfect to enjoy in the colder months.

Chop 400 g of salted cod soaked in water and deboned; boil it in 1/2 liter of milk and 1/2 liter of water with a pinch of salt, 2 finely sliced onions, and 2 quartered potatoes.
When the cod is well cooked, strain everything and return to the heat, allowing it to gently come back to a boil.
Adjust with salt and pepper, add half a teaspoon of apple cider vinegar, 1/2 glass of liquid cream, and 1 teaspoon of chopped chervil.
Serve with croutons.
