
Cold Cotechino is a delicious cold starter made with pork cotechino, a vegetable salad and a marinade of wine vinegar and lemon. It is a dish rich in flavors and perfect for special occasions.






Boil a homemade farmhouse cotechino in water.
The next day, slice it thinly and arrange the slices neatly on a serving platter.
Then dress with a little olive oil, salt, pepper, lemon juice and a few drops of vinegar.
Separately, prepare the carrots, onion and celery stalks: clean, wash and cut them into thin slices.
After cooking the vegetables in salted water and draining them, arrange them evenly over the entire surface of the sliced cotechino.
Sprinkle everything with chopped parsley and let it marinate for a few hours before serving.
Any leftover cotechino can be reused by pan-frying it.
This results in a very tasty dish, but it should not be cooked further.
