Preparation

Clean the cod fillet and cook it for 10 minutes infused in oil heated to 65 degrees

Cook the belly trimmings in a pan with oil and water, then blend them, adjusting with salt and pepper

Blanch the broccoli florets and drizzle them with the fish sauce
