

Consommé is a tasty traditional French first course made with ground beef and aromatics, which is strained to obtain a clear, transparent soup. Perfect to enjoy during cold winter days.
In a pot place the ground beef, the vegetables cut into pieces, and the egg whites
Pour in the cold broth and stir well
Place over the heat and, stirring constantly, bring to a boil
Lower the heat and let simmer for about one hour
Then strain the broth through a cloth
If you want to flavor it, add to each cup one tablespoon of dry sherry
Recommended wines: none, because consommé is intended to cleanse the palate
