In a pot, place the minced meat, chopped vegetables, and egg whites
Pour in the cold broth and mix well
Place on the heat and, stirring constantly, bring to a boil
Lower the heat and let it cook for about an hour
Then strain the broth with a cloth
If you want to add flavor, add a tablespoon of dry sherry to each cup
Accompanying wines: no wine because the consommé is designed to cleanse the taste buds
