Beat 3 eggs with a pinch of salt, incorporate 125 g of flour and dilute with a quarter of milk; let it rest for half an hour (very important!)
Heat a 15 cm diameter pan, brush it with butter, pour a ladle of batter off the heat and let it spread over the bottom; put it back on the heat and cook the crepe on both sides
Continue this way until the batter is finished
