Crocchè are a culinary specialty originating from the Campania region. They are small cylinders of fried potatoes filled with chopped parsley and grated Parmesan cheese. These appetizers are crispy on the outside and soft on the inside, perfect to enjoy hot and freshly fried.
Wash the potatoes and boil them in plenty of salted water for about 40 minutes
Drain, peel, and mash them, adding grated Parmesan cheese and chopped parsley
Fry in plenty of seed oil
