Crostini with spleen is a typical appetizer from Sicilian cuisine. It consists of toasted white bread slices topped with a sauce made from veal spleen, anchovies, onion, garlic, carrot, and white wine. The result is a dish with an intense and rich flavor, perfect to start the meal.
Finely chop 1 small onion, 1 clove of garlic, and 1/2 carrot and sauté them in a pan with oil and a bit of butter
Add the spleen (from which the skin has been removed) and cook, adding a bit of white wine and a bit of vegetable broth
When the mixture is cooked, pass it through a grinder along with the anchovies, then return it to the pan and keep warm while preparing the white bread fried in butter
Spread the mixture on the slices and serve the crostini hot
