
Crostini alla milza are a typical appetizer of Sicilian cuisine. They consist of toasted slices of pancarré topped with a sauce made from veal spleen, anchovies, onion, garlic, carrot and white wine. The result is a dish with an intense, rich flavor, perfect to start a meal.


Finely chop 1 small onion, 1 garlic clove and 1/2 carrot and sauté them in a pan with oil and a little butter
Add the spleen (with the membrane removed) and cook, adding a little white wine and some vegetable broth
When the mixture is cooked, pass it through a food processor together with the anchovies, then return it to the pan and keep warm while you fry the pancarré in butter
Spread the mixture on the slices and serve the crostini hot
