Prepare a mince with the garlic, sage and rosemary, pour it into a small bowl adding 6 tablespoons of raw olive oil and the salt
Mix well
In the meantime, preheat the oven to 200 degrees and put the meat in it (without any seasoning, not even salt)
Keep for 20 minutes if you prefer it classically rare
Turn off the oven and, once the meat is removed, close the oven door to maintain the temperature
Brush the meat well with the aromatic mixture and put it back in the oven for a few minutes (without turning it on again)
