Divine Tuna Balls are a delicious appetizer made with tuna in oil, ricotta and hard-boiled eggs. Soft and succulent, these balls are perfect to enjoy during an aperitif or as a starter at lunch or dinner. The tuna in oil gives an intense, enveloping flavor, while the ricotta makes the balls light and creamy. Lemon juice, capers and mayonnaise add a touch of freshness and acidity. A simple dish to prepare but with a surprising result!
Using a food processor, blend together one peeled hard-boiled egg, the tuna (previously drained), the capers, the ricotta, the softened butter and the lemon juice.
Then season with salt and pepper and place the mixture in a large bowl, which you will keep in the refrigerator for about 15 minutes.
Meanwhile peel the remaining eggs, slice them, and arrange them on a flat serving plate; then take the mixture out of the refrigerator and, using the palms of your hands, form small balls and place them on the slices of hard-boiled egg.
Finally, garnish them with swirls of mayonnaise and serve.
Tip: to make your plate more attractive you could line it with large lettuce leaves and add capers or slices of pitted black olives on top of the mayonnaise swirls.
