Preparation
- STEP 1 OF 4
Cover the bottom of a baking dish with a layer of coarse salt, place the duck well tied with a thin string on it, and cover it completely with coarse salt, pressing it down well
- STEP 2 OF 4
Cook in a very hot oven (about 220 degrees) for at least an hour and a half
- STEP 3 OF 4
Once cooked, remove the salt and lift the duck by the string
- STEP 4 OF 4
Salt cooking: completely cover the meat with salt; to be quicker when serving, wrap it in wax paper before the salt; always break the casing in front of the guests to let them appreciate all the aroma of the food
