Cover the bottom of a baking dish with a layer of coarse salt, place the well-tied duck on it with a thin string and completely cover it with coarse salt, pressing well.
Bake in a very hot oven (about 220 degrees) for at least an hour and a half.
Once cooked, remove the salt and lift the duck by holding it by the string.
Break the crust in front of the diners to let them appreciate all the aroma of the food and serve.
