
Fregnacce alla Sabinese are a first course typical of Lazio cuisine. This recipe features fregnacce-type pasta dressed with mixed mushrooms, tomato, parsley, black olives, olive oil, minced garlic and chili pepper. A flavorful dish rich in Mediterranean flavors.







Fregnacce are similar to maltagliati.
Cook the pasta in boiling salted water.
Take a pan, add garlic, oil and chili, and sauté; then add mushrooms, black olives and tomato and cook everything for about 10 minutes.
Drain the pasta, combine it with the prepared sauce and toss to coat.
Finally, sprinkle everything with parsley.
