Friarielli with Cervellatine is a typical Neapolitan side dish. The friarielli, or broccoletti, are sautéed in a pan with garlic, chili pepper and guanciale, then accompanied by the delicious cervellatine. A tasty and flavorful side, perfect to pair with meat or fish dishes.
Clean and wash the friarielli and let them drain well
Gently sauté the cervellatine in a pan with the oil, diced guanciale, garlic, and chili pepper
Remove the cervellatine and add the friarielli to the sauce; salt immediately and cover, letting them stew in their own water
Once cooked and reduced, add the cervellatine back in, let them absorb the flavors, and serve
