Fried anchovies are a delicious seafood main course typical of Italian cuisine. The fresh anchovies are immersed in milk, then dredged in flour and finally fried in hot olive oil. The result is a crunchy and flavorful dish, perfect to enjoy with a squeeze of lemon juice and a sprinkle of parsley.
Gut the anchovies, wash them, dry them and leave them to soak in the milk for half an hour.
Drain them, coat them in flour and fry them in hot oil.
Drain them, season with salt, arrange them on a serving plate and garnish with lemon wedges and sprigs of parsley.
They are excellent when accompanied by a good white wine!
