Fried anchovies are a delicious seafood second course, typical of Italian cuisine. Fresh anchovies are soaked in milk, then coated in flour and finally fried in hot olive oil. The result is a crispy and flavorful dish, perfect to enjoy with a sprinkle of lemon juice and a dusting of parsley.
Gut the anchovies, wash and dry them, and soak them in milk for half an hour
Drain them, coat them in flour, and fry them in boiling oil
Drain them, salt them, arrange them on a serving dish, and garnish with lemon wedges and sprigs of parsley
They are great when accompanied by a good white wine!
