Trim, wash and boil the whole fennel in salted water
Cut into thick slices crosswise and gently pat dry on kitchen paper towels
Dip the slices in the beaten egg seasoned with salt and then in the grated cheese
In a non-stick pan melt the butter and brown the slices on both sides
