Gazpacho is a cold soup typical of Spanish cuisine, perfect for summer. This recipe uses ripe tomatoes, red onion, cucumber, garlic, stale bread, extra virgin olive oil, red wine vinegar, water, salt, and pepper. It is an extremely simple dish to prepare, just blend all the ingredients together until you get a creamy consistency.
It is a typical Spanish soup that should be served very cold. Blend the well-squeezed bread with the vegetables, oil, vinegar, salt, and a bit of water until you get a not too thick cream.
Pour the gazpacho into a soup tureen and let it cool in the refrigerator for at least an hour.
Serve it with some of the vegetables cut into small pieces and not blended, and some fresh basil leaves.
Blender
It is recommended to prepare the gazpacho at least an hour before serving to allow the flavors to blend.
