

Gazpacho is a cold soup typical of Spanish cuisine, perfect for summer. This recipe uses ripe tomatoes, red onion, cucumber, garlic, stale bread, extra-virgin olive oil, red wine vinegar, water, salt and pepper. It is an extremely simple dish to prepare; just blend all the ingredients together until you obtain a creamy consistency.
It is a typical Spanish soup that should be served very cold. Blend the well-drained bread with the vegetables, the oil, the vinegar, the salt and a little water until you obtain a cream that is not too thick.
Pour the gazpacho into a soup bowl and let it cool in the refrigerator for at least one hour.
Serve it with some of the vegetables cut into small pieces and not blended, and with fresh basil leaves.

It is recommended to prepare the gazpacho at least one hour before serving to allow the flavors to meld.
