Gently fold in the egg whites whipped to stiff peaks and stir to obtain a frothy batter
Blanch the broccoli florets and cut the salted cod into uniform pieces
Dip the broccoli florets and the salted cod in the batter then fry in hot oil
Season with salt
Separately, slice the onions and soften them in a pan with the olive oil, sugar, salt and vinegar
Serve the salted cod and the turnip tops (cime di rapa) with the red onions
