Gnocchi are a typical dish of Italian tradition, particularly widespread in the north of the country. They are dumplings made of potatoes, flour, egg, and salt, cooked in boiling water until they float to the surface. Gnocchi can be seasoned with various sauces, such as ragù or Genoese pesto. This recipe is easy to prepare and requires few ingredients.
Boil the potatoes, peel them, and pass them through a potato masher
Add the flour and the egg, and knead until you obtain a homogeneous dough that is not too hard
Form thin rolls (cylinders) and cut them into pieces (2 cm in length)
One by one, pass them over a fork to give them a curled shape
Boil the gnocchi thus obtained in plenty of salted water
Season to taste, preferably with tomato sauce
