Gnocchi with Peppers is a tasty and colorful dish that combines the softness of potato gnocchi with the intense flavor of peppers. This recipe comes from Italy, in particular the Lazio region. The peppers, together with ingredients such as onion, carrot and celery, are sautéed in a pan to create a savory sauce, which is then combined with the gnocchi and enriched with cooking cream and parsley. A first course that will leave everyone pleasantly impressed!

Chop the onion and sauté it with a little oil in a covered pan
After a few minutes add half a glass of water and the vegetable stock cube
Cook over medium heat for 3-4 minutes, uncover and add chopped carrot, celery, parsley, garlic and rosemary
While it cooks, clean the peppers, cut them into strips and then into cubes; add them to the pan
Add water if necessary
Stir occasionally: when the peppers are half cooked add the chopped, seeded tomatoes
Season with salt and pepper and add a pinch of chili pepper
When the vegetables are cooked, puree them in a blender or pass them through a food mill, then bind with the cooking cream
Cook the gnocchi in plenty of water that is not too salty, drain them and toss with the sauce
This very flavorful vegetable sauce is a revised version by a famous chef of a classic of Calabrian cuisine and is also excellent for dressing strozzapreti or homemade maccheroni
