Gnocchi with Peppers is a tasty and colorful dish that combines the softness of potato gnocchi with the intense flavor of peppers. This recipe originates from Italy, particularly from the Lazio region. The peppers, along with ingredients like onion, carrot, and celery, are sautéed in a pan to create a flavorful sauce, which is then combined with the gnocchi and enriched with cooking cream and parsley. Chop the onion and sauté it with a little oil in a covered pan
After a few minutes, add half a glass of water and the stock cube
Let it cook over medium heat for 3/4 minutes, uncover and add chopped carrot, celery, parsley, garlic, and rosemary
While it cooks, clean the peppers, cut them into strips and then into cubes: add them to the pan
Add water if necessary
Stir occasionally: when the peppers are halfway cooked, add the chopped and seedless tomatoes
Adjust with salt and pepper, add a pinch of chili pepper
When the vegetables are cooked, blend them in a mixer or food mill, then mix with the cream
Cook the gnocchi in plenty of not too salty water, drain them and dress with the sauce
