
Golden calamari are a delicious seafood dish typical of Mediterranean cuisine. The calamari are cleaned, cut into strips and dipped in the batter, then fried until golden. They are crispy on the outside and tender on the inside, perfect to enjoy as a main course accompanied by aioli or lemon mayonnaise.




In a bowl mix the flour with the egg whites beaten to stiff peaks, baking powder, salt and as much beer as needed to obtain a soft batter.
Heat plenty of oil in a pan and fry the calamari after dipping them in the batter.
When they are nicely golden, drain them on absorbent paper and serve very hot sprinkled with white pepper.
