

Gratinated beans are a delicious side dish made with cooked white beans then gratinated in the oven with a mix of aromatic herbs, breadcrumbs, butter and olive oil. They are a tasty and hearty accompaniment, perfect to serve with meats and fish.
Soak the beans in water overnight.
Then cook them in cold water with the aromatic herbs, a pinch of salt and a little pepper.
When cooked, drain them, reserving a little of the cooking water, and place them in a baking dish with knobs of butter, breadcrumbs, a drizzle of oil and some of the cooking water.
Bake in the oven for 15 minutes.
