
Baked oysters are a delicious seafood dish, perfect as an appetizer or a main course. The oysters are opened and then baked in the oven with a delicious sauce made of white wine, cooking cream, and parsley. The final result is a dish rich in flavors with a delicate taste, ideal to serve on special occasions.


Open the oysters, set aside the shells, and filter the water
Measure the filtered water and add the wine until you have a liquid quantity of about 30 cl
Preheat the oven to 230 degrees. Place the oysters in a saucepan, cover them with the water-wine mixture, and let them simmer on the stove for a couple of minutes. Drain them with a slotted spatula and place them on the cleaned shells that were set aside
Reduce the cooking liquid of the oysters by about 1/3. Work the butter with the flour to obtain a manipulated butter and gradually add it to the liquid while stirring vigorously without stopping over moderate heat until the sauce is thick and homogeneous
Remove from heat and while continuing to stir, add the egg yolk. Salt and add a pinch of cayenne pepper
Cover the oysters with a spoonful of sauce each, place them on a baking tray, and let them bake for ten minutes
Before serving, garnish with chopped parsley
