Sauté the onion in 10 g of butter, add the sliced mushrooms and pancetta
Season with Sherry, the stock cube and pepper
Cook for 5 minutes
In the remaining oil and butter, cook the scaloppine
Add the herbs, season with salt, arrange them in a baking dish and cover with the mushrooms
Using the remaining flour, the milk and the meat juices, make a béchamel, pour it over the meat, sprinkle with cheese and bake in a 200°C oven for 20 minutes
