Green polenta is a typical dish of Italian tradition, in particular from the Lombardia region. It is a variation of the classic yellow polenta, enriched with spinach which gives it an intense green color and a fresh flavor. The polenta is slowly cooked in a pot, stirring continuously until it reaches the right creamy consistency. It is then served hot and seasoned with melted butter and grated Parmigiano.
Wash the spinach, boil it in salted water, drain, squeeze out excess water and chop
Prepare polenta by cooking the cornmeal in 150 cl of lightly salted water, stirring constantly
When the polenta is cooked, add the spinach and the butter and mix the ingredients well
Serve immediately sprinkled with grated Parmigiano
