Green polenta is a traditional Italian dish, particularly from the Lombardy region. It is a variation of the classic yellow polenta, enriched with spinach that gives it an intense green color and a fresh flavor. The polenta is slowly cooked in a pot, stirring continuously until it reaches the right creamy consistency. It is then served hot and topped with melted butter and grated Parmesan cheese.
