
Grilled chicken with aromas is a tasty and light dish, perfect for a summer dinner. The chicken pieces are marinated in olive oil, lemon juice, aromatic herbs, and chilies, then grilled until a delicious crust forms. Black olives add a touch of Mediterranean flavor. This recipe is originally from Italy but is also loved in many other countries. Try it with fresh side dishes like mixed salad or grilled vegetables.
















Carefully clean the chicken pieces, sprinkle them with salt and plenty of pepper, and place them in a bowl; add the onion cut into rings, the crushed garlic, the olives, the sage, the rosemary, the bay leaves, the halved and deseeded chilies, the juice of half a lemon, and the oil.
Turn the pieces of chicken in the bowl several times to soak in the dressing, cover the bowl with a sheet of plastic wrap, and let it marinate for half a day in a cool place.
After the indicated time, drain the chicken quarters from the marinade and place them on the hot grill skin side down. Let them cook for 20 minutes on each side and be sure to brush them occasionally with the marinade.
Serve the chicken very hot with some accompanying sauce.
