Grilled rabbit is a tasty and light main course, perfect for summer. The rabbit is marinated with lemon juice, garlic, dried sage and seasoned with pancetta to make the meat even more flavorful. Once grilled, the rabbit becomes tender and succulent. This recipe is easy to prepare and ideal for a garden dinner with friends and family.
In a small bowl mix 3 tablespoons of oil with the lemon juice, the chopped garlic, the sage, one teaspoon of salt and one of freshly ground pepper
Brush the rabbit pieces with the remaining oil and wrap them with the slices of pancetta
Place them on the grill and roast them on all sides over hot charcoal; then raise the grill and continue cooking for 25-30 minutes, turning them and brushing them often with the prepared emulsion
Before removing the rabbit pieces from the heat check the cooking by inserting a skewer into the meat: if the liquid that comes out is clear, the meat is cooked through
Then remove them from the grill and serve immediately
