Grilled rabbit is a tasty and light main course, perfect for summer. The rabbit is marinated with lemon juice, garlic, dried sage, and seasoned with bacon to make the meat even more flavorful. In a small bowl, mix 3 tablespoons of oil with the lemon juice, chopped garlic, sage, a teaspoon of salt, and a teaspoon of freshly ground pepper
Then brush the rabbit pieces with the remaining oil and wrap them with the bacon slices
Place them on the grill and roast them on all sides over hot coals; then raise the grill and continue cooking for 25-30 minutes, turning them and brushing them often with the prepared emulsion
Before removing the rabbit pieces from the heat, check their doneness by piercing the meat with a skewer: if the liquid that comes out is clear, it is cooked
Then remove it from the grill and serve immediately
