Grilled rabbit is a tasty and light second course, perfect for summer. The rabbit is marinated with lemon juice, garlic, dried sage, and seasoned with bacon to make the meat even tastier. Once grilled, the rabbit becomes tender and juicy. This recipe is easy to prepare and ideal for a garden dinner with friends and family.
In a bowl, mix 3 tablespoons of oil with the lemon juice, minced garlic, sage, a teaspoon of salt, and a teaspoon of freshly ground pepper
Then brush the rabbit pieces with the remaining oil and wrap them with bacon slices
Place them on the grill and roast all sides with the burning charcoal; then raise the grill and continue cooking for 25-30 minutes, turning and brushing them often with the prepared emulsion
Before removing the rabbit pieces from the heat, check their doneness by poking a skewer into the meat: if the liquid that comes out is clear, it is cooked
Then take it off the grill and serve immediately
