Take a bowl and mix together the wine, onion, lemon juice, and oil
Dip the shrimp in it and let them marinate for about 1 hour in the fridge
Get a heavy-bottomed pan, pour in the oil, and heat over medium-high heat
Add the garlic, spring onions, peppers, and ginger, and cook for 2 minutes, stirring continuously
Then add the coriander and mustard together for 1 minute
Add the tomatoes and cook for another minute, then turn off the heat and mix with the vinegar and raw sugar
Let the mixture rest in a sauceboat
Heat the grill and skewer the shrimp two by two
Lightly brush with the marinade and cook for about 3 minutes at 3 cm from the heat
They should become opaque
Prepare a bed of rice on a serving plate and serve
