Take a bowl and mix together the wine, onion, lemon juice, and oil
Immerse the prawns and let them marinate for about 1 hour in the fridge
Get a pan with a thick bottom, pour in the oil and heat over medium-high heat
Add the garlic, spring onions, chilies, and ginger, and cook for 2 minutes, making sure to stir continuously
Add the coriander and mustard together for 1 minute
Add the tomatoes and cook for 1 more minute, then turn off the heat and mix in the vinegar and brown sugar
Let the mixture rest in a sauce boat
Heat the grill and thread the prawns two by two onto skewers
Give a light brush with the marinade and cook for about 3 minutes, about 3 cm from the heat
They should become opaque
Prepare a bed of rice on a serving plate and serve
