Take a bowl and mix together the wine, onion, lemon juice, and oil
Soak the shrimp in it and let marinate for about 1 hour in the fridge
Get a thick-bottomed pan, pour in the oil, and heat over medium-high heat
Add garlic, scallions, chilies, and ginger, and cook for 2 minutes, taking care to stir continuously
Add cilantro and mustard after 1 minute
Add the tomatoes and cook for another minute, then turn off the heat and mix in the vinegar and brown sugar
Let the mixture rest in a sauceboat
Heat the grill and thread the shrimp two by two onto skewers
Give a light brushing with the marinade and cook for about 3 minutes at 3 cm from the heat
They should become opaque
Prepare a bed of rice on a serving plate and serve
