Preparation

Prepare the stuffing: heat the butter in a saucepan and sauté the finely chopped shallots along with the rabbit's heart and liver cut into small pieces; separately brown the kidneys, then remove from heat and keep everything warm.

Pass the veal and bacon through a meat grinder, collect the result in a bowl, and mix in the spices, egg yolk, liver sauté, necessary salt, a grind of pepper, and cream.

Salt and pepper the rabbit's abdominal cavity, stuff it with half of the prepared stuffing, add the kidneys and olives, and cover with the remaining stuffing.

Close the abdominal cavity well by sewing it with kitchen thread or using wooden skewers.

Place the rabbit in the special basket for grilling, folding the front and back legs onto the abdomen.
