Place the olive oil, sage leaves, chopped rosemary sprig, bay leaf, halved garlic cloves, sliced shallot, and coarsely crushed black peppercorns and mustard seeds in a bowl.
Mix all the ingredients well, then add the tuna steaks to the bowl, cover with a sheet of plastic wrap, and let marinate for 2-3 hours.
After this time, drain the fish slices from the marinade, salt them on both sides, and grill them for about 10 minutes.
