Grouper with Avocado is a delicious fish main course where the grouper fillet is pan-cooked and served with a fresh avocado sauce. Perfect for a light and healthy lunch.
Put two liters of water in a pot with the sliced shallot, carrot in rounds, a stalk of celery in pieces, a whole clove of garlic, a bunch of parsley, a sprig of thyme, the juice of the lemon, four peppercorns, and a pinch of salt.
Bring to a boil and cook covered on low heat for about half an hour.
Remove the pot from the heat and let it cool.
Immerse the cleaned and washed fish in the pot of broth, put it back on the heat, bring to a gentle boil, and cook on low heat.
