Grouper with Avocado is a delicious fish main course in which the grouper fillet is cooked in a pan and served with a fresh avocado sauce. Perfect for a light and healthy lunch.
Put two liters of water in a pot with the shallot sliced, the carrot in rounds, a celery stalk cut into pieces, one whole garlic clove, a sprig of parsley, a sprig of thyme, the juice of the lemon, four peppercorns and a pinch of salt.
Bring to a boil and cook, covered, over low heat for about half an hour.
Remove the pot from the heat and let it cool.
Immerse the gutted and washed fish in the pot with the broth, return to the heat, bring to a gentle boil and cook, always over low heat.
