Clean and wash the Jerusalem artichokes and cut them into thin slices
In a pan, melt a knob of butter, add the slices of Jerusalem artichokes, pour over the cream and let them infuse for 5 minutes
Season with salt and cook until done, keeping in mind that the sauce must thicken; if necessary, uncover during the last minutes and slightly increase the heat
Remove from the heat, sprinkle with a small bunch of chopped parsley, stir, transfer to the serving dish and serve hot
