Karjalanpaisti is a traditional dish of Finnish cuisine, originating from the region of Carelia. It is a stew of beef and pork, enriched with carrots, turnip greens and onion, flavored with black pepper and bay leaf. Everything is cooked slowly to ensure tender and succulent meat. A tasty and hearty dish, perfect for cold winter days.
Brown the meat in a pan with a few knobs of butter
Brown it 200 g at a time for better results
Sear the onion separately, then put all the ingredients in a high-sided roasting pan
Add enough water to cover the meat, put on the lid and cook in the oven at 150 degrees Celsius
Occasionally open the oven door and stir
The stew is ready when the meat cubes begin to fall apart (it will take at least 3 hours)
Be careful not to let the meat dry out
Serve with boiled potatoes dressed with butter
