
Kosheri is a traditional Middle Eastern dish made of rice, lentils and tomato sauce, seasoned with garlic and onion. Originating from Egypt, it has become very popular throughout the Middle East. It is a very nutritious and flavorful dish, perfect for a complete meal.







Cook the rice separately
Soak the lentils in lukewarm water and place them in a pot with plenty of water
Bring to a boil
Simmer until all the water has been absorbed
Add more water if the lentils are not yet fully cooked
Prepare the sauce by first browning the garlic in the hot oil
Add the tomato purée and cook for 10–15 minutes
Add the water and vinegar and bring to a boil
Remove immediately from the heat and season with salt
Thinly slice the onion and briefly fry it in a little hot oil
Serve by arranging on the plate a layer of lentils, one of rice, another of lentils and one of rice
Spoon the onions and sauce over the layers
