Kosheri is a traditional Middle Eastern dish made of rice, lentils, and tomato sauce, seasoned with garlic and onion. Originally from Egypt, it has become very popular throughout the Middle East. It is a very nutritious and flavorful dish, perfect for a complete meal.
Boil the rice separately
Soak the lentils in lukewarm water and place them in a pot with plenty of water
Bring to a boil
Cook over low heat until all the water is absorbed
Add more water if the lentils are not yet well cooked
Prepare the sauce by first browning the garlic in hot oil
Add the tomato purée and cook for 10/15 minutes
Add the water and vinegar and bring to a boil
Remove immediately from heat and salt
Thinly slice the onion and briefly sauté it in a little hot oil
Serve by arranging a layer of lentils, a layer of rice, another layer of lentils, and a layer of rice on the plate
