Sauté the meat in hot oil for 10 minutes. Remove it from the pan and in the same oil fry the chopped onions and crushed garlic.
Add the meat back in.
Add the chopped mint and thyme, salt, and pepper.
Moisten with broth and lemon juice.
Add the olives and tomato sauce.
Cook covered for 1 hour on moderate heat.
