
Milanese Minestrone is a delicious vegetable soup with pasta and pancetta, typical of Milanese culinary tradition. Prepared with seasonal ingredients like onion, parsley, basil, and sage, the minestrone is also enriched with pork rinds and Parmigiano cheese. Boil the pork rinds in salted water for 10 minutes, drain and cut into strips
Sauté the chopped pancetta, onion, and parsley in oil, add the pork rinds and the minestrone vegetables
Season and add 150 cl of hot water
Cook for 45 minutes then add the rice and cook for 15 minutes
Add the chopped mixture, stir and turn off
Serve with Parmesan cheese
