Beat the eggs with half of the parmesan, salt, and chopped parsley
Grease a 12 cm diameter pan and cook thin omelettes
Let them cool and cut into strips
Sauté the chopped spring onion with the garlic and 3 tablespoons of oil
Add the tomato, salt, chili, mint leaves, and cook for 10 minutes
Add the omelette strips and sprinkle with parmesan
