

Bollito misto is a traditional Italian dish, particularly popular in the winter. It consists of a variety of boiled meats, accompanied by a range of sauces, vegetables and pickles. It is a rich and tasty preparation, ideal for Sunday lunch or special occasions.
Place a pot with plenty of salted water on the heat, add the cleaned vegetables and when the water comes to a boil immerse the beef, lower the heat and cook for one hour; then add the veal, the tongue, the hen and the head
Continue cooking over low heat until the meats are cooked
Cook the cotechino separately
Drain the meats, cut them into pieces, arrange them on a serving platter and surround with slices of cotechino
Serve with salsa verde and steamed vegetables
