Mushrooms with spinach are a delicious, flavorful yet light side dish, perfect to pair with meat or fish mains. Champignon mushrooms are sautéed in a pan with some Marsala wine and then enriched with boiled and chopped spinach, grated Parmigiano cheese and butter. A pinch of salt and pepper complete this delicacy.
Clean and slice the mushrooms, sauté them in butter and cook covered with Marsala, salt and pepper.
Boil the spinach, sauté it in butter, add it to the mushrooms and let the flavors meld.
Sprinkle with grated Parmigiano and serve hot.
