Mussels with mayonnaise are a delicate seafood appetizer perfect for starting a meal focused on freshness and flavor. The mussels are steamed and then served with a delicious mayonnaise-based sauce, which gives them a creamy texture and a slightly tangy flavor. The dish is characterized by a perfect balance between the sweetness of the mussels and the creaminess of the mayonnaise, enriched by the aromatic scent of parsley and onion. Mussels with mayonnaise are a simple appetizer to prepare and are highly appreciated by seafood lovers.

Wash the mussels thoroughly under running water, scrubbing them with a hard brush to remove all the encrustations
Finely chop the onion and parsley and place them in a large pan with the mussels and a few pepper grains
Without adding any liquid, let the mussels open spontaneously over high heat: when they are all open, remove them from the pan and detach the shell part with the mollusk, leaving it in place
Arrange the mussels on a serving plate
Let the liquid released by the mollusks settle, then filter it through a damp cloth
Put the white wine and chopped shallots in a saucepan and bring to a boil until the wine is reduced by half, then add half a glass of the liquid: strain it and stir in a tablespoon of cream, then let it cool
Prepare the mayonnaise and dilute it slowly with the prepared mixture; then season it with lemon juice and a teaspoon of mustard
Pour the sauce over the mussels and serve them cold
