Thoroughly wash the mussels under running water, scrubbing them with a stiff brush to remove any encrustations
Finely chop the onion and parsley and put them in a large pan together with the mussels and a few peppercorns
Without adding any liquid, let the mussels open naturally over high heat: when they have all opened, remove them from the pan and separate the shell half containing the mollusk, leaving the mollusk in place
Arrange the mussels on a serving plate
Allow the liquid released by the mollusks to settle, then strain it through a wet cloth
Put the white wine and the chopped shallot in a saucepan and boil until the wine is reduced by half, then add half a glass of the reserved liquid: strain it through a sieve and stir in a tablespoon of cream, then let it cool
Prepare the mayonnaise and slowly dilute it with the prepared mixture; then season it with lemon juice and a teaspoon of mustard
Pour the sauce over the mussels and serve them cold
