Preparation

  1. STEP 1 OF 8

    Thoroughly wash the mussels under running water, scrubbing them with a stiff brush to remove all encrustations

  2. STEP 2 OF 8

    Finely chop the onion and parsley and place them in a large pan along with the mussels and a few peppercorns

  3. STEP 3 OF 8

    Without adding any liquid, let the mussels open spontaneously over high heat: once they are all open, remove them from the pan and detach the shell part containing the mollusk, leaving it in place

  4. STEP 4 OF 8

    Arrange the mussels on a serving dish

  5. STEP 5 OF 8

    Let the liquid released by the mollusks settle, then strain it through a damp cloth

  6. STEP 6 OF 8

    Put the white wine and chopped shallot in a saucepan and boil until the wine is reduced by half, then add half a glass of the liquid: strain it and add a tablespoon of cream, then let it cool

  7. STEP 7 OF 8

    Prepare the mayonnaise and slowly dilute it with the prepared mixture; then season it with lemon juice and a teaspoon of mustard

  8. STEP 8 OF 8

    Pour the sauce over the mussels and serve them cold
