
Nettle soup is a traditional dish of Italian cuisine, particularly widespread in the central-northern regions. Wearing gloves, remove all the leaves and fibers from the nettles that adhere to the stems
Wash them, drain well, and chop roughly
In a pot, heat three tablespoons of oil and sauté the finely chopped pancetta and garlic
When they are colored, add the peeled tomatoes, seeded and diced
Cook for about ten minutes, season with salt, add the nettles, mix carefully, and let them flavor
Pour in the hot broth
When it reaches a boil, add the rice and complete the cooking
Serve the soup hot immediately
