

Orange butter is a delicious sauce with a citrusy and slightly spicy flavor. Ideal for accompanying meat or fish dishes, or for use as a dressing for salads and vegetables. The fresh note of orange pairs perfectly with the creaminess of the butter. A real explosion of flavors!
Wash an orange under running water, dry it, and grate the zest.
Place this in a small saucepan along with the juice of both fruits and the sugar, and bring it to a boil.
Reduce the liquid to about one third of the initial quantity over moderate heat.
At the end, remove the juice from the heat, add the mustard, a pinch of salt, a grind of pepper, and the chopped parsley and basil.
Put the softened butter at room temperature in a bowl, add the reduced orange juice, and work everything with a wooden spoon until a homogeneous mixture is obtained.
Serve the butter cold in the hollowed half of an orange.
