
Orange Butter

Preparation

Wash an orange under running water, dry it, and grate the zest
- STEP 2 OF 6
Place this in a small saucepan along with the juice of both fruits and the sugar, and bring everything to a boil

Reduce the liquid to about one-third of the initial amount over moderate heat
- STEP 4 OF 6
At the end, remove the juice from the heat and add the mustard, a pinch of salt, a grind of pepper, and the chopped parsley and basil

Put the softened butter at room temperature in a bowl, add the reduced orange juice, and mix everything with a wooden spoon until you get a homogeneous mixture

Serve the cold butter in the hollowed-out peel of half an orange
